Slow Cooked Roast

1 beef roast, 3-5 lbs.
1 onion, sliced
1 can cream of mushroom soup

Place roast in pan. Pour cream of mushroom soup and onion on top. Cover tightly. Bake at 250° for 1 hour. Then turn down to 225° and cook for 15 or more hours; 10 hours for roasts smaller than 3 pounds.
Fast  & Easy Baked Green Peppers

Cut the tops off of green peppers, clean out the seeds and use a can of chili for filling.

Bake at 350° for about 10-15 minutes.
Stroganoff

½-1 lb. round steak
½ tsp. garlic powder
1 cup sour cream or yogurt
1 Tbsp. Worcestershire sauce
1 (10 ¾ oz.) can cream of mushroom soup
2-3 cups rice or egg noodles
1 Tbsp. catsup cooked
1 tsp. onion salt
1 cup mushrooms, sliced (optional)

Cut round steak into small bite-sized pieces. In a large skillet, brown on medium high for 5-10 minutes (until cooked through). Add the rest of the ingredients and blend well. Cook only until heated through. Serve over rice or egg noodles. Serves 4.
This is excellent for inexpensive roasts. It makes them so tender they fall off the bone and are almost impossible to lift out of the pan. Excellent for Sunday after church or for guests, because it can cook for 2 or 3 hours longer without overcooking. Since no meat is left on the bone you get more for your money. Serves 4.

Use a meat thermometer to make sure internal temperature reaches 145°.
Taco Salad is a family favorite for summer-time. We use it as a main dish, but it's filling enough for an entire meal!
Mom's Taco Salad

1 pound hamburger, browned and drained
1 envelope taco mix
Chopped tomato (maybe 2)
Small can of sliced black olives
A bit of chopped onion for taste
One head of Lettuce torn for salad
8 oz package of shredded cheddar cheese
8 oz spicy French-type dressing (family favorite is Dorothy Lynch)
Corn chips (Fritos or other brand)
Canned red beans (optional)

Mix the hamburger with the taco mix and set aside to cool. Make the salad from the lettuce, tomato, onion, olives,cold beans, and shredded cheese.  Add some of the corn chips.  Add the seasoned hamburger and mix well.  Then add some of the French dressing.  When ready to serve, top with a few more chips and drizzle a bit more French dressing on top.
