Taco Seasoning Mix
1/4 cup dried minced onion
1/4 cup chili powder
3 Tbsp salt
4 tsp cornstarch
1 Tbsp dried minced garlic
1 Tbsp ground cumin
1 Tbsp crushed red pepper flakes
2 tsp beef bouillon granules
1 1/2 tsp dried oregano
(Combine all ingredients and store in air-tight container for up to a year.)
To prepare the taco filling
1 pound ground beef or ground turkey
½ cup water
2 tablespoons taco seasoning mix
Brown the ground beef/turkey in a skillet and drain off the grease. Add water and taco seasoning mix and simmer for ten minutes stirring occasionally. Makes enough for eight to ten tacos.
Chili Seasoning Mix
This Chili Seasoning Mix is excellent, but on the spicy side. If you like your chili hot, follow exactly. To tone it down, simply reduce the amount of crushed red pepper. The great thing is that this mix will also thicken your chili just a bit and make it very hearty.
1/4 cup all-purpose flour
4 teaspoons chili powder
1 tablespoon crushed red pepper
1 tablespoon dried minced onion
1 tablespoon dried minced garlic
2 teaspoons white sugar
2 teaspoons ground cumin
2 teaspoons dried parsley
2 teaspoons salt
1 teaspoon dried basil
1/4 teaspoon ground black pepper
In a bowl, whisk together flour, chili powder, red pepper, onion, garlic, sugar, cumin, parsley, salt, basil and pepper. Store in an airtight container. To use, add 2 tablespoons of mix for each 1 pound of meat, following your favorite chili recipe.
