Cousin Joan's Granola Mix

Joan says:  This recipe is really very inexact so just about anything works. It makes a huge batch but it's our favorite. Besides snacks and breakfast, it's great ice cream topper. It's especially wonderful when still  fresh and warm!

Basic Recipe:

14 C       Old Fashioned Oatmeal
1-1/2 C   Unsalted Sunflower Seeds
1 C         Salted Sunflower Seeds
1-1/2 C   Coconut
1-1/2 C   Wheat Germ (or Oat Bran)
1-1/2 C   Ground Raw Peanuts

1T    Cinnamon
3T    Vanilla (also good with Almond Extract)
1 C   Cooking Oil
2 C   Honey

Variations:
1-2 C   Ground Flax Seeds
1-2 C   Slivered Almonds (and omitting peanuts)
Pecans, Walnuts or Pine Nuts are good
Kids love 1 Pkg Graham crackers, ground

In large bowl, mix all dry ingredients very well.

In glass bowl, microwave honey, oil, cinnamon & vanilla until warm enough to easily  mix well.

Pour liquid over dry ingredients and stir well, lifting from bottom of bowl.

Bake at 325 stirring every 10-15 minutes until toasty brown.
Watch edges of mix on pan don't get too dark. Remove to cool. (I scrape it off into 6 qt stock pot.)
Stir as it cools to prevent clumping.
After it's completely cooled to room temperature, store in air-tight containers.

Note: After baking and cooling, you can add raisins or any other chopped dried fruits.

When Granny was a little girl, her own dad used to make homemade tortilla chips.  This was before packaged tortilla chips came out!  We had Fritos but nothing like the Doritos or the other packaged tortilla chips available now.
Fried Tortilla Chips

corn tortillas
oil for frying
salt (optional)

Cut tortillas into wedges. Heat 1 inch of oil in a frying pan. Fry several wedges until crisp on both sides. Remove with slotted spoon and drain on paper towels. Sprinkle with salt if desired.
